4 ingredients. Incredible flavor. Crispy chicken skin. Ohhh yessir.
Preheat a grill to medium heat.
Gently loosen the skin from the chicken, using your fingers to form pockets. Stuff lemon slices under the chicken skin and pull skin back over lemon slices to secure.
Drizzle olive oil all over chicken. Liberally season chicken with Greek seasoning or kosher salt and pepper.
Grill skin-side down for 10 minutes until the skin is crispy and grill marks have formed. Flip, and continue cooking.
Flip once more if necessary, until chicken is barely cooked through to the bone, Use a meat thermometer or cut a small slice in the chicken if you aren’t sure.
Allow the chicken to rest for 5 minutes before serving with your favorite side dishes.
Note: No grill? Broil for 5 minutes so the skin gets crunchy, then bake at 350ºF for 20-30 minutes until cooked through. Lemony goodness no matter what!
