A different and easy way to use the pre-trimmed, pre-packaged pork loin that doesn’t take a lot of effort after a long day at the office.
Preheat oven to 350 degrees.
Spray a sided baking pan with cooking spray.
In three prep containers (for this recipe, I use the disposable aluminum pie pans), assemble your breading ingredients. In the first, place the flour and mix with the garlic salt. In the second, lightly beat two eggs with a fork. In the third, place the Panko breading.
Rinse the pork loin and pat dry with paper towels. Slice into 1/2″ slices. I usually get 12 to 15 medallions.
In assembly-line fashion, prep each medallion by dipping and coating each side in the flour mixture, then egg, and lastly the Panko breading. Place on the baking sheet.
Bake for 30 to 35 minutes, or until golden.
