This was my first experience with fish that wasn’t frozen. If I’d known it was this easy, I’d have made it sooner!
Preheat your oven to 400F and line a shallow baking pan with aluminum foil to help with easy clean up.
Place your fillets skin side down in the baking pan and spread with a thin layer of the honey Dijon mustard.
Season with salt and pepper if you’d like, and cover with the Italian bread crumbs.
Drizzle the entire thing with butter before placing in the oven for 15 minutes or until the salmon flakes easily with a fork.
I also used a bit of lemon on the top, just because any time I see fish, there’s lemon. Didn’t seem to hurt any.

I have salmon 2-3 times a week just because it’s quick. I had used dijon mustard before, but never thought about adding the bread crumbs. Thanks for the idea!
