Savory chicken salad on a sub roll toasted with melted cheese.
Preheat oven to 450F.
Drizzle some oil in a skillet and preheat over medium-high heat. Season chicken with salt and pepper chicken; saute until browned on both sides and done all the way through, about 3 to 4 minutes on each side. Tenderloins don’t take long to cook. Add chopped onions when chicken is close to being done and saute.
When chicken is done, chop into bite-sized pieces or shred. Add chicken to a large bowl. Add mayo, relish, seasoning, and salt and pepper to taste. Mix all together.
Lay buns open on a baking sheet. Scoop some chicken mixture onto a bun and top with shredded cheese. Place in the oven for about 5 minutes to melt the cheese and brown the edges of the bread. Serve on plate with tater tots!
