A great pasta that’s full of veggies and sausage!
Cook the penne pasta in a large pot of boiling salted water according to package instructions for al dente. When done drain it and set aside.
In a large saute pan over medium heat add the olive oil. Once oil is hot add the garlic, onion and peppers and saute until tender. Remove the vegetables from the pan and set aside.
Place the canned tomatoes in the saute pan with the fresh herbs, red pepper flakes, salt and pepper and cook to reduce for 10 minutes on medium high heat. Add the tomato paste and stir to combine and let simmer for 5 minutes more.
Add the fresh tomatoes, the sauteed peppers and the cooked and sliced sausage into the tomato sauce. Toss to combine and heat through. Add the penne pasta and the mozzarella. Toss to combine. Serve immediately sprinkled with the parsley.
