If you don’t like salmon, you can also use any other fish such as halibut, tuna, tilapia, swordfish, mahi-mahi, cod, or trout.
Preheat oven 425 degrees or preheat grill.
Coat four 12×12 squares of heavy aluminum foil with cooking spray; place 1 piece of salmon in the center of each square.
Top with equally-divided vegetables and seasonings.
Fold and seal foil edges, then place packets on a baking sheet.
Bake for 15 to 20 minutes until fish flakes and vegetables are tender. Or place packets on a hot grill for 15 to 20 minutes.
