Description

Burritos, like you’ve never had them!

Ingredients

  • ½ pounds Ground Beef
  • 1 package (about 1 Oz. Packet) Taco Seasoning Mix
  • ½ whole Tomato
  • ¼ whole Cucumber
  • ½ whole Red Bell Pepper
  • 1 can (15 Oz. Size) Corn
  • 6 whole Flour Tortillas
  • 1 cup Grated Cheese
  • 12 Tablespoons Salsa
  • 12 Tablespoons Sour Cream

Preparation

Fry ground beef and add taco seasoning mix according to the package instructions.

Chop vegetables, then add beef and vegetables to the tortillas, with desired amounts of cheese, salsa and sour cream.

Roll up tortillas tightly and place in a pan. Sprinkle more cheese on top, then stick in a 350ºF oven for 25 to 30 minutes, until burritos are golden.

Made this for dinner last night with a pound of chicken instead of the 1/2pound of beef… it was great! I used whole wheat tortillas, left out the cucumber and used a whole small tomato… so like others have said – very adaptable! And very tasty! My husband and I liked all the mingling flavors!

Very good, and adaptable. I didn’t have tomatoes the first time I made it, so I poured tomato sauce in with the meat.

This was yummy and easy!

I tweeked the recipe a bit. I won’t eat cucumbers and I forgot the corn and the salsa. Instead of tomatoes and red bell peppers, I used leftover sauted onions, green bell peppers and jalapenos from the Tasty Kitchen Shrimp tostadas I made last night. I also added a thin layer of refried beans before I put the meat on. Oh and I only used 1 package of taco seasoning.

I can’t wait to make again and not forget the corn and salsa. Thanks for the recipe tinykorean!

This recipe is now a permanent resident of my recipe box. Such a simple idea with very tasty results. I made these with our typical taco fillings (black beans, corn, salsa, tomatoes, etc) and large gluten-free tortillas. Since they were going to be baked, I used frozen corn and uncooked (washed) black beans.

Perfect!

These were excellent. I didn’t have any red peppers on hand, and the cucumbers sounded like an odd addition to me, so left out those two ingredients. I let the tomatoes and corn simmer in the taco mixture for about 20 minutes before assembling the burritos. Used fat free sour cream and a homemade taco seasoning that my mom has been making for years. Loved the burritos- especially the crispness of the tortillas. We’ll be making these again!
