Chickpea Avocado Sandwich is a healthy, quick and easy lunch option. Chickpeas are my favorite legume. I love their creamy texture. This is one of the most simple and easy lunches I have ever made.
In a medium bowl, mash the chickpeas and avocado together. Add in cilantro, onion, tomatoes, green chilies and lemon juice. Season with salt and pepper, to taste.
Spread avacado spread on a slice of bread and dig in. It’s deliciuos and healthy. You could also grill your sandwich you wish.
