Tasty mac and cheese for the mac and cheese skeptic.
Cook bacon until crisp; crumble. Set aside.
Boil noodles in salt water. When done, drain.
In meantime, melt butter on medium-high. Add flour and cook for a couple of minutes to cook off flour flavor. The desired result is a roux—add extra flour if necessary.
Whisk in milk, whisking often until it begins to thicken (about 5 minutes). When mixture is thickened, turn off heat and add in salt and pepper. Stir in shredded cheese. Stir until cheese is melted.
Place noodles in baking dish. Pour cheese mixture over and fold in. Stir in bacon (can substitute or add in a vegetable or other favorite ingredient). Sprinkle a layer of bread crumbs on top.
Bake at 375ºF for 30-45 minutes or until hot and bread crumbs are golden.
