Description

Healthy pasta meal.

Ingredients

  • FOR THE CHICKEN:
  • 8 ounces, weight Chicken, Boneless, Skinless
  • 10 ounces, fluid Chicken Broth
  • ¾ ounces, weight Italian Dressing Mix
  • FOR THE PASTA:
  • 8 ounces, weight Angel Hair Pasta
  • 1 Tablespoon Olive Oil
  • 1 teaspoon Garlic, Minced
  • 1 teaspoon Basil
  • 1 cup Carrots, Sliced
  • 10 ounces, weight Frozen Broccoli Florets, Thawed
  • ⅔ cups Chicken Broth
  • ¼ cups Parmesan Cheese, Grated

Preparation

For the chicken:
In a crockpot, combine chicken, chicken broth and Italian dressing mix. Cook on low for 6-8 hours.

For the pasta:
In large pot, heat water for pasta to boiling and cook to package directions. While pasta is cooking, heat olive oil in skillet. Add garlic, basil, carrots and broccoli and cook for 6 minutes. Add chicken broth to vegetables, reduce heat and simmer for 4 minutes.

Shred chicken and add to veggies. Drain pasta and place in a large serving bowl. Top with chicken mixture and Parmesan cheese.
