A healthy, quick spin on the traditional chicken fajita quesadilla. Made with onions, peppers, cheese and chicken, served with a side of salsa and Greek yogurt.
Spray a skillet with non-stick cooking spray and heat over medium heat. Once hot add onions and peppers and cook until softened, about 5 minutes.
Add onions, peppers, chicken and cheese onto half of the FlatOut Bread or tortilla, and fold over the other half.
Spray a clean skillet with cooking spray and heat it over medium heat. Add tortilla to skillet and cook until light golden, flip and cook other side until lightly golden and cheese is melted, about 2 minutes per side.
Serve with plain Greek yogurt and salsa.
