A yummy, savory and flavorful salute to the pie!
I have picked up pizza dough from my local parlor or you can make a homemade crust. In a pinch, we have also used an already-baked shell from the store.
Roll out and brush your dough with extra virgin olive oil. Bake according to directions. While dough is baking, wash and slice the bell peppers and red onion very thinly. Remove the whole tomatoes from their juice and quarter.
Remove the crust from the oven and brush again with olive oil. Spread a thick layer of Alfredo sauce over the top of the crust and sprinkle the peppers, onions and tomatoes evenly over the sauce. Drizzle a tablespoon of olive oil over the entire pizza. Sprinkle the dried Italian seasoning over the top and bake at 400F until veggies have started to caramelize and sauce is bubbly.
I have been known to sprinkle some feta on top of mine, but some glorous, fresh parmigiano reggiano would sit beautifully atop this pizza. Enjoy y’all!
