Description

Whole wheat flat bread, garlic, olive oil sauce, chicken sausage and a bounty of fresh veggies make these super light and tasty.

Ingredients

  • 2 Tablespoons Olive Oil, Divided
  • 3 slices Chicken Sausage Links, Cut Into 1/2" Slices
  • 3 cups Kale, Sliced Into Ribbons
  • 2 whole Whole Wheat Flat Breads (I Used Trader Joe's)
  • 3 cloves Garlic, Minced
  • 1 Tablespoon Italian Seasoning
  • 1 cup Fresh Mozzarella, Cut Into Thin Slices
  • 4 whole Radishes, Sliced
  • 1 cup Artichoke Hearts, Chopped
  • ½ cups Onion, Sliced
  • ½ cups Parmesan Cheese, Shredded

Preparation

Preheat oven to 450 F. Place a pizza stone in the oven.

In a cast iron skillet over medium high heat, heat 1 tablespoon olive oil. Add chicken sausages and brown about 2 minutes per side. Toss kale into the skillet and saute just until starting to wilt. Remove skillet from heat.

Remove stone from oven and place flatbreads onto the stone. Brush with olive oil and spread garlic over the crust. Sprinkle with Italian Seasonings.

Place fresh mozzarella onto the pizza. Top with chicken sausage, kale, radishes, artichoke and onions. Top with Parmesan cheese.

Bake about 10 minutes until cheese is melted and flatbreads are crispy.
