Juicy chorizo and goat cheese stuffed pork chops!
Combine the sausage, cheese, red pepper, thyme and pepper to taste. Slice the pork chops to create a pocket. Stuff with the sausage mixture. Tie the pork chops 3 times with kitchen twine, evenly spaced.
BBQ for 15-20 minutes at 325ºF until the pork chops are cooked through. Enjoy!
