A light, satisfying summer meal. Perfect for a weekend and so easy for a weeknight meal.
Heat grill or broiler.
Brush salmon with olive oil and season with spices. Grill salmon about 10 minutes or until it flakes easily with a fork.
In a cast iron skillet, add oil, garlic, and onions. Let bloom 2 minutes. Add corn, peppers, water, and spices. Let cook about 5 minutes, until veggies are crisp-tender.
Serve salmon over corn relish and enjoy.
