Description

Grilled pizza with white sauce, red onions, mushrooms and bacon.

Ingredients

  • 2 Tablespoons Olive Oil, Divided
  • 1 Tablespoon Finely Minced Garlic
  • ¼ teaspoons Red Pepper Flakes
  • 1 Tablespoon Butter
  • 2 Tablespoons Flour
  • 1 cup Half-and-Half Or Milk
  • 1 teaspoon Paprika
  • 1 dash Salt
  • 1 dash Pepper
  • ½ whole Purple Onion, Very Thinly Sliced
  • 1 container Sliced Baby Portabello Mushrooms
  • 1 container Bacon (I Used The Microwave Kind)
  • 1 package Pizza Dough
  • ½ cups Olive Oil (for Brushing On Dough)
  • 1 dash Sea Salt
  • 1 cup Shredded Mozzarella Cheese

Preparation

Lets get two things out of the way first, ok? I used microwave bacon and pre-made pizza dough and I am not sad about it. :-) If you want to do the long version, be my guest. I, however, am too lazy.

So, in a sauce pan, heat 1 tablespoon of olive oil. Add garlic and red pepper flakes. Saute for a bit. Add butter and then flour. Cook the flour down a little. Add the milk (I heat mine a little in the microwave first). Keep on stirring until it thickens and makes a white sauce. Add paprika, salt and pepper.

Heat up your grill.

In a heavy skillet, heat remaining 1 tablespoon of olive oil and throw in the onions. Cook for about 3 minutes. Add mushrooms (and a dash of salt). Continue cooking until they are all brown, wilted and good.

Meanwhile, cook up the bacon (in my case, microwave!) and then crumble it up into a small bowl. While this is happening, take a cookie sheet and spray THE BACK with oil.

Spread your pizza dough out on THE BACK (you will have a rectangle). You are going to use your cookie sheet like a spatula or helper. Brush the exposed dough with some olive oil and then sprinkle with sea salt. Flip it over on your grill so that the olive oil side is down. Brush the now exposed side with more olive oil and sea salt.

Grill for about 3 minutes. Bubbles are good! Flip. Grill for about 2 minutes more. Slide your pizza back onto the back of the sheet. Spread on the white sauce. Add your toppings (bacon, onion, and mushrooms). Top with shredded cheese. Slide pizza back onto the grill and shut the lid. Continue to cook for a couple more minutes or until the cheese is all melted and good.

P.S. The picture is “BC” or before cheese! It looked prettier. However, at my house, we don’t eat anything “BC” so we did add all that shredded mozzarella. Enjoy!
