This cookie is loaded with lots of goodies. It reminds me of a candy turtle, with the caramel, nuts and chocolate chunks. It is both crunchy from the nuts and chewy from the caramel.
Preheat oven to 350 F. In a large bowl cream together the butter and sugars. Beat in the instant pudding mix, until blended. Add the eggs and vanilla and beat until combined. Blend in the flour, baking powder and baking soda. Stir in the chocolate chunks, caramel bits and the pecans.
Drop by rounded spoonfuls onto cookie sheets that you’ve covered with parchment paper. Bake for 10-12 minutes.
