It’s embarrassing how easy it is to make this delicious dish–but you’d never know how simple it is based on the taste! SO good and hearty…as great for guests, potlucks, and drop-off-dinners for families with new babies or sick loved ones as it is for your own family. Freezes well and is great year-round. Enjoy!
Boil chicken breasts in water until cooked through (about 20 minutes). When cool enough, cut chicken into bite-sized pieces.
In a large slow cooker, combine chicken, beans, salsa, and cumin. Mix well.
Cook on LOW for 6-8 hours or on HIGH for 4 hours.
During the last 30 minutes of cooking time, add the shredded sharp cheddar (about 2 cups, or 1 regular bag). Stir well and continue to cook.
When ready to serve, top each individual serving with a sprinkling of shredded mozzarella. Add other toppings to your liking–we prefer sour cream and tortilla chips. Other potential toppings include avocado, chopped cilantro, etc.
NOTE: I usually use the 2% milk versions of the cheeses and a low-fat sour cream to cut back on calories–and I cannot tell a difference in taste.

Made this recipe and LOVED IT. It was so easy to just dump the ingredients in and go. We didn’t add the mozzarella cheese to make it a little healthier, but did top it off with a little shredded cheddar. It’s in the fridge and we had leftovers for lunch!

This was excellent! The family gave it two thumbs up….unfortunately when I made it I forgot to add 2 additional cans of beans. Even with that error, the flavor was so good and you can do alot of things with it. We did it over rice. I also dumped an 8oz container of sour cream IN with the chili and stirred it up…I think it gave it an extra bump.

Just made this…YUM!!! I used dry white beans and cooked them first for a few hours. A new family favorite.

Made this recipe tonight and it was a hit with the family. Forgot to put it in the slow cooker before work so I pan fried the chicken & added the beans, etc. to the pan. Turned out wonderfully!

I made this recipe last week and my oldest daughter (age 7) promptly told me that I should have made this a long time ago. It will definitely make a regular appearance in my family meal plan!
