Extremly tender grilled pork tenderloin brushed with olive oil and spices accompanied by grilled asparagus wrapped in crispy prosciutto.
For the pork medallions:
Heat grill to medium heat. Place pork medallions in a bowl, add olive oil and spices. Mix until all the pork is covered in the olive oil mixture. Place pork on grill and cook 5 minutes per side. Cover and let it rest for 5 minutes.
For the asparagus:
Cut off the ends of the asparagus. Place in a bowl and add olive oil and a sprinkle of salt and pepper. Wrap each piece of asparagus with prosciutto.
Place asparagus on grill set on medium heat. Turn every couple of minutes until asparagus is fork tender, about 5 to 10 minutes.
