I love a chicken salad sandwich and there are as many variations as there are cooks. I usually make a pretty standard chicken salad recipe. You know the one … chicken, celery, sometimes grapes or pecans. A favorite of mine for sure. But I wanted to do something different using what I had on hand. The light bulb went on when I saw the apples in my crisper. I immediately thought of the Waldorf salad.
Combine chicken, apples, celery and walnuts in a bowl. In a separate bowl mix together mayonnaise, milk and sugar. Stir to mix well. Pour dressing over the chicken mixture. Stir to combine. Place in the refrigerator and chill for approximately 30 minutes before serving. Makes 4 servings.
