This is a great go-to meal for those busy nights. It would also make a great appetizer if cut into smaller pieces.
Note: ingredient measurements are approximate. You can add/delete amounts as you like. I happen to love roasted red peppers, so there is more of those on the pizza than the other ingredients.
Preheat oven to 400°F.
Slice red onion and roasted red peppers into 1/4″ slices. Slice basil into chiffonade (roll leaves together in a bunch and slice thinly for basil confetti).
Line a baking sheet with foil. Place focaccia loaf on the pan and brush liberally with olive oil. Sprinkle salt and pepper over the loaf. Take about 1/4 cup of the mozzarella cheese and sprinkle over the focaccia. Next, add the tomatoes, onions, peppers, then top with the remaining cheese.
Place in the oven for approximately 15 to 18 minutes until the cheese is melted and the bread is heated through.
Remove from the oven and immediately sprinkle the basil on the hot pizza.
Slice into squares and enjoy!
