A spiced up take on a traditional sandwich.
For the mayo:
Combine mayo and chipotle pepper in a food processor. Pulse until fully combined. Allow to rest in the fridge while you prepare the rest of the sandwich.
For the sandwich:
Cook bacon either in a skillet over medium heat or in the microwave, just until crispy. I cooked mine in the microwave for 2 minutes and 30 seconds and it was perfect.
Toast bread until golden brown. Spread mayo on the inside of each slice of bread. Layer on bacon, tomato and lettuce.
