This is a traditional recipe from a 100+ year old copy of Mrs. Beeton’s Everyday Cookery—an English cookbook classic! My British mom and I had fun one evening working together and fixing these for my post. They are simple and elegant! Enjoy!
Cut the peeled cucumber into 20 slices 1/8” thick.
Combine the oil, vinegar and pepper. Soak the cucumber slices in the oil mixture.
Flatten the white bread a little with a rolling pin. Butter the slices of bread. Punch out 4 rounds per slice of bread with a round pastry cutter that is the size of the diameter of the cucumber.
To assemble the sandwiches, take a slice of cucumber and let the excess oil drip off. Then sandwich between 2 rounds of the buttered bread.
