Just another great way to pamper the tastebuds. This dish brings the taste of pork to a different level with a subtle flavor of apples and spice. If cranberry is a turkey’s best friend, then apples are pork’s. It’s very easy to make and I promise you, your house will smell of freshly baked apple pie. A wonderful dish for the holidays or really, any day!
Preheat oven to 400 F.
Place the tenderloin in a roasting pan or casserole dish with a lid.
Combine the remaining ingredients in a bowl and stir together. (Yes, it will be dry. Upon cooking, the juices from the apple will make it into puddles of juicy goodness.)
Spoon the dry mixture around the tenderloin. Cover and bake for 30 minutes.
Remove the lid and spoon the apple mixture over the tenderloin. Really pile it on!
Return to the oven to bake for 15 to 20 minutes longer until tenderloin is browned and cooked through. If using a meat thermometer, it should register 155 to 160 F when done.

Very yummy! I mashed up the apples and served over tenderloin slices (because my kids are not fans of cooked apples and served with roasted root vegetables which are cooked at same temp on a cookie sheet on lower rack…

This was really good. I will definitely make it again — good enough for company. I used a pork loin roast instead of the tenderloin and I did it on the bbq (it’s too hot to start the oven) following the instructions above, but cooking about 25 min. longer.

I made this over the weekend and it was fabulous! Super easy to throw together, the meat was very tender and juicy and the apples were a great side with it! Loved it!

I just tried a variation on your theme, and it was great! I have some “jerk” seasoning and two apples that were on their way out, so I looked for a recipe and found yours – thank you! After I sprinkled the seasoning on top of the loin and baked it on my cookie sheet for 20 minutes, I chopped the apples and mixed in some brown sugar and cinnamon plopped them on top, cooked for another 25 minutes (on 350 – I think my oven runs hot) and served a very happy husband.
