My mother-in-law loves my meatloaf. She is always our guest for lunch after church on Sundays. And if we’re having meatloaf, that’s the only day I make it.
Preheat oven to 350 F.
In a large bowl, thoroughly combine all of the meatloaf ingredients. I usually begin mixing with a fork, breaking up the meat and the eggs. Mix until thoroughly combined. Sometimes the hands just have to get involved. Place into a standard loaf pan and smooth to level the top. Top with piquant sauce before baking.
For the piquant sauce: Mix together all of the ingredients and pour on top of the prepared meatloaf.
Bake in a 350 F oven for 60 minutes. I always bake potatoes (regular and/or sweet) along with the meatloaf.
