This is my favorite pasta dish. The fontina cheese and creamed spinach makes it sooo creamy! Yum! It is Italian restaurant-worthy. A great dish to impress guests!
Cook pasta in salted water according to package directions. Drain pasta but reserve 1 cup of pasta water.
Place pasta in a large serving bowl; cover and set aside.
In a large skillet, heat oil until hot. Add mushrooms, onion, salt and black pepper; cook until mushrooms are golden, 5 to 7 minutes. Stir in thawed creamed spinach and tomatoes; cook until tomatoes are heated through, about 3 minutes.
Add pasta to the skillet and toss with the mushroom mixture. You can also add the mushroom mixture to the pasta if the skillet is not large enough. Add cheese; toss to melt cheese and coat pasta. Add reserved pasta water for desired consistency. Usually I don’t need to add too much water. You want it to be creamy.
