A delicious filling for homemade ravioli! I use Tyler Florence’s recipe for the dough (http://www.foodnetwork.com/recipes/tyler-florence/ravioli-dough-recipe/index.html), the Kitchen Aid pasta dough roller, and a ravioli form.
1. Brown the onion in the olive oil until turning translucent. Add the garlic.
2. Add both sausage and beef, break into very small pieces and cook through.
3. Add spices and seasonings, remove from heat. Drain and cool.
In a food processor, add ricotta cheese, Parmesan cheese, egg, and the sausage/ground beef mixture. Process together until it reaches an almost paste-like consistency. Refrigerate until ready to use. Can also be frozen.

You could easily roll the dough sheets out with a rolling pin, and the form was only about $30 off amazon. Although, here is how I did it before I had the form: http://traveledroad.wordpress.com/2008/11/02/ravioli-holy-cannoli/

I am simply jealous you have a kitchen aid but you have a ravioli form too?!!! Anything pasta and you have my attention. These looks beautiful and one thing I have never ever made was ravioli , I have got to get on the ball. Thanks for the recipe.
