Delicious cheese tortellini with fresh vegetables and Polish sausage!
Heat olive oil in a saute pan. Add chopped onions and Polish kielbasa, then add all the fresh veggies. Cook for a few minutes until veggies are tender (make sure you chop carrots small so they don’t take a long time to cook). Add a little salt and paprika to the mix.
In the meantime boil, some water in a pot. Cook tortellini according to package instructions. Drain.
Add tortellini to saute pan with the rest of the ingredients and cook for about 15 minutes. Add the rest of the salt, pepper, paprika, Parmesan cheese and nutmeg.
Serve hot and enjoy!

I made this last night and it was a hit with my husband and 3 year old. I also used a bag of frozen mixed veggies and it worked out just fine. I thought that the entire dish was nicely coated and not dry at all.

As far as dryness you can always add some butter so its not so dry, pesto works well too, or if you want a healthier alternative just add some tomatoe sauce.

I made this dish night before last and it was wonderful! I didn’t have the fresh veggies so I just used a frozen bag of mixed veggies (and picked out the lima beans…yuck) and it turned out great. My husband commented on it, saying “Wow babe this is really good, where did you get this idea?” I have yet to reveal my source Thanks for the recipe. I’ll definitely be making it again!

Liked the concept of this recipe, but mine didn’t produce any liquid to coat the tortellini and they were dry. I also wish I left out the nutmeg, didn’t care for it in this recipe.

you are absolutely right, use any sausage and any veggies you like! I use this a lot for my kids super fast and easy.
