A super easy, extra delicious dish from a great Southern Italian cook.
Dice bacon and fry until well done but not crispy.
While the bacon cooks, slice the onion lengthwise, not too thin, not too thick.
Add the onion slices to the bacon and cook until onion is translucent.
(You can pour off most of the bacon fat and use your favorite cooking oil, but don’t remove all of it. Leave at least a couple of spoonfuls for more flavor.)
Drain the peas and add to the pan with the onion and bacon and cook for about 10 minutes.
Add the mixture to the hot, cooked pasta and season with plenty of freshly ground black pepper. Top with grated cheese, if desired.

(I know, I know, CANNED peas?? We have tried this with fresh or frozen and it’s just not as good!)
