Paninis are a great way to make another meal out of leftover ham from Easter. Paninis are so good, and completely adaptable based on what you like and what you have on hand. We went with ham, havarti cheese and a simple jalapeno butter on a pretzel roll. It was beyond delicious!
In a small bowl, combine diced jalapeno and butter. Slice rolls in half lengthwise and butter the inside and outside of the rolls. Spray a grill pan with cooking spray and heat over medium heat.
Add 1-2 slices of cheese and 2-3 slices of leftover ham to each panini. Cook on the grill pan using the top to press the panini closed. Cook 3-4 minutes then turn over and cook 1-2 minutes on the other side, or until cheese has melted.
