This is a delectable sandwich. Stuffed with all things healthy and delicious, the avocado adds a nice, creamy texture, the cheese makes for a filling meal, and the tomatoes add a sweet crunch.
Toast each slice of wheat bread.
Meanwhile, mash avocado using a fork in a small bowl. Stir in salt and blend until smooth.
Cut tomatoes into slices and set aside.
Once all slices of bread are toasted, remove and place on the counter. Spread 1 tablespoon avocado on each piece. Divide the mozzarella among the slices of toast and top each slice with tomatoes. Assemble the sandwiches by placing one prepared slice on top of another. Serve immediately while warm.
