Break out of the box of normal burrito flavors!
Open, drain, and rinse the cans of beans. Put them into a bowl. Combine beans with curry paste.
Slice then quarter onions. Mince the garlic and saute it in a bit of oil over medium heat until brown. Remove the garlic from the pan and set aside. Then, saute the onion in the same pan until softened and slightly browned but not mushy.
Put the cooked rice in a medium-sized bowl. Add the garlic into the cooked rice. Mix the onion in with the bean mixture.
Chop the cilantro and add it, the tomato paste, lime juice, and a few dashes each of salt and pepper to the rice.
Heat both the rice and bean mixtures for a few minutes in the microwave, if desired.
To assemble the tortillas, layer lettuce, rice, beans, several tomatoes and a few dollops of yogurt into a whole wheat tortilla. Roll it up and enjoy!
