Description

One pot, easy and delicious, great for a last gasp cold weather meal.

Ingredients

  • 6 whole Large Red Or White Potatoes
  • 6 whole Carrots, Peeled
  • 1 head Green Cabbage
  • 1 quart Low Sodium Chicken Stock
  • Water, If Needed To Fully Cover The Vegetables
  • 1 whole Kielbasa Sausage (1 Pound Weight)
  • 1 Tablespoon Dried Marjoram
  • 1 teaspoon Dried Thyme

Preparation

Cut up (into bite-sized pieces) some firm potatoes like Red Bliss or white potatoes. Either work well in this dish. Place them in a large pot, then cut the carrots into coins or chunks and add them into the pot. Then core and chop a head of cabbage. I would suggest cutting it into quarters, then cutting those quarters into thirds and place them in the pot. Add some chicken broth or stock; low sodium is best. Make sure to add enough to cover most of the vegetables. Add some water if needed or more chicken broth.

Finally add some Kielbasa sausage that you’ve cut into chunks. Season with some marjoram and thyme, cover the pot and let it simmer until the potatoes are done and the cabbage is done as well. It will probably take at least 15 minutes for the potatoes to be done.

Taste and season with some salt and pepper if you like.

Serve with some cornbread if you like. This was so good, I can’t even begin to tell you. A by adding more potatoes, carrots and cabbage you can stretch this dish out as well. I really like budget friendly dishes like this.
