Growing up, my mom used to make this, and it’s just like stuffed peppers, only the peppers are chopped up in this recipe instead!
Preheat oven to 350 degrees.
Chop one whole bell pepper and half an onion. Begin browning ground beef in a skillet. Add in bell pepper and onion once pan is thoroughly heated.
Bring water to boil for instant rice. Prepare rice as directed on package. Set aside.
Once meat is done, drain and stir in 1 to 2 cans of diced tomatoes. Season with salt and pepper to taste.
Cut 8 ounces of Velveeta into cubes and stir into the meat mixture to melt. Add in cooked rice and stir to combine.
Place all ingredients into an oven safe dish and bake for 20 to 30 minutes until heated through.
