Shepherd’s pie is a staple of traditional Irish cooking and there are many, many versions out there. This recipe was the one my mother-in-law always made. A definite favorite of The Husband. It’s easy and is one of those dishes that you can change and adapt to whatever vegetables your family likes or you have on had. So in honor of The Husband and my children’s Irish roots, dig in and enjoy!
Brown ground beef and onions. Drain off fat. Stir in tomato sauce. Mix well.
Place ground beef mixture in a 2 1/2 quart covered casserole dish. Next layer the green beans and the corn. Sprinkle the salt and pepper over the vegetables. Spread the mashed potatoes over the vegetable layer. Make sure they are evenly distributed around the dish.
Cover and put in a 350ºF oven for 30 minutes. The sauce in the meat mixture will bubble up through the vegetable layer and infuse the flavor throughout the “pie.”
Serves 6.
