This is a wonderful comfort dish, especially on cold nights. This is a very easy dish to make and it will not disappoint your family. Even the kids will like it! : )
In a 3-quart saucepan (I use my dutch oven), saute onion, chopped celery and butter.
Add chicken and noodles. If you are not using rotisserie chicken, saute the chicken in a separate pan and after it is cooked, then add it with the noodles.
Combine the cream of chicken, chicken broth, lemon juice, pepper, and mushrooms plus juice in a bowl. Add to the pot.
Cover and boil. Simmer on low for 15 to 20 minutes until sauce thickens and noodles are tender. Stir often.
Serves 4 to 6.

I doubled the recipe, added a little more onion and some white wine. It was delicious!
