Yummy chicken breast with cheese and mushroom sauce. I cooked this for dinner 2 nights ago. It was wonderful, especially served with a salad of mixed greens.
Place chicken breast between sheets of waxed paper and flatten slightly.
Whisk egg yolks with water. In a large bowl, combine flour, salt, pepper, paprika, bread crumbs, and Parmesan.
Dip chicken in egg, then roll in flour mix. Brown chicken in butter on both sides. Place in a shallow baking dish. Add the mushrooms and bake at 350 degrees for about 20 minutes. (You can also omit adding the mushrooms at this point, and instead add them to the sauce.)
To prepare the cheese sauce, melt 2 tablespoons of butter in pan. (If you are adding the mushrooms to the sauce, this would be the time to add them in.) Slowly stir in flour; add milk and cook, stirring, until sauce thickens. Season with Worcestershire, Parmesan, cheddar and mozzarella.
When all is done, put chicken on a serving plate and pour sauce over it.
