An easy Italian sandwich that is a nice change from the norm.
Brush both sides of bread with olive oil. Broil one side until lightly browned. On the toasted side, place fresh basil leaves, tomato slices, and fresh mozzarella slices. Sprinkle with salt and pepper. Broil until cheese begins to melt.
Place second slice of bread on top, toasted side down. Broil sandwich until lightly browned on top. Flip over; broil until lightly browned on top and cheese is melted. To eat, dip in balsamic vinegar.
(I often eat this open-faced. If you do, just toast both sides of the bread before broiling.)

If you’d like a fuller sandwich, you could make it more Mediterranean themed and add grilled eggplant, grilled zucchini and some pesto. Another great addition to it is avocado. These all go very well together with the ingredients you’ve used already and make for a richer, heartier sandwich! Of course, a Caprese is a caprese no matter what. I just decided to add some tips for a little bit of oomph if you’re in the mood.
