Description

Taste just like Mandarin chicken from a Chinese Restaurant! Lots of extra sauce to pour over rice.

Ingredients

  • ¾ cups Jasmine Rice
  • 1-½ cup Salted Water
  • 6 whole Chicken Tenders
  • 1 cup Flour
  • ½ teaspoons Salt And Pepper
  • ⅓ cups Oil
  • ½ cups Orange Juice
  • ½ cups Orange Marmalade
  • 2 Tablespoons Honey
  • 2 Tablespoons Soy Sauce
  • 1 teaspoon Ground Ginger

Preparation

Cook rice in the salted water until tender.

Cube chicken.

Stir together flour, salt and pepper. Dredge chicken in flour mixture.

Heat oil in skillet. Place flour-covered chicken in hot oil. Cook until golden on each side and cooked through. Remove chicken from oil and set aside.

To the pan, add orange juice, orange marmalade, honey, soy, and ginger. Stir while simmering until thickened.

Add chicken back to sauce, stir so that sauce covers chicken. Turn off heat.

Serve chicken and sauce over rice.

Made this for dinner tonight, It was very good. I added a red pepper and a about 1 quarter of an onion.

Delicious!! Added a pinch or red pepper flakes for a little heat and we loved it. At first I was worried the sauce would be too thin but after adding the chicken back in and letting it simmer for a bit it thickened up nicely. Perfect balance of sweet and savory.

Made this for dinner tonight. Easy and quite tasty. I added a little cornstarch to thicken it up. If you like spicy, add small red peppers, however my husband liked it just like this.
