You always hear people say “the classic pot roast,” even though everyone seems to make it a little different. Here’s my take on the classic.
Chop onion into large thick pieces and place along the bottom of slow cooker. Set roast on top of the onions and put carrots around it. Pour the liquid smoke on the roast and then sprinkle on the mesquite seasoning. Pour in the remaining ingredients and give it a good stir before placing the lid on and cranking the heat up on high. The roast will be falling apart in 8 hours.
I suggest serving with a side of mashed potatoes and gravy. Don’t forget to use that juice in the slow cooker in your gravy!
