Similar to a pizza, but instead of pizza sauce creme fraiche is used as the base. This traditional flammkuchen recipe is a very common dish served in German restaurants.
1. Add water, yeast and a pinch of sugar into a large bowl and let the mixture stand for 10 minutes.
2. Then add olive oil, salt and flour a little at a time and mix with a fork or using a KitchenAid standalone mixer. Mix until you reach a dough consistency.
3. Put the dough onto a floured surface and knead for 10 minutes.
4. Cover the dough with a tea towel and let it rise for 1 hour.
5. Preheat oven to 525 F.
6. Punch to deflate dough and roll it out on a floured surface. Transfer the dough to a greased pizza pan.
7. With a tablespoon, drop creme fraiche around the surface of the dough and smear it around to the edges.
8. Sprinkle pepper over the creme fraiche.
9. Add ham and onions, then top with mozzarella cheese.
10. Bake for 10-15 minutes. Be careful not to brown the top too much. Crust should be hard when done.
