These are crunchy on the outside with warm, cheesy barbecue on the inside. All wrapped in a handheld package.
Put the onion and chicken into a small bowl. Add barbecue sauce and stir until well coated.
Heat a flat skillet or large pan on medium-high heat until hot. Add one flour tortilla into the hot skillet and sprinkle it with 1/2 cup of cheese and half of the chicken mixture. Spread the chicken mixture evenly over the tortilla and add another 1/2 cup of cheese.
Top with another tortilla and cook 2 – 4 minutes per side to achieve a crispy brown exterior. When it’s done, remove it to a cutting board and repeat with the remaining tortillas and filling.
Cut each quesadilla into 4 or 8 pieces and serve by itself or with condiments of your choice.
