Description

Quick and tasty meal to satisfy your citrus craving.

Ingredients

  • 1-½ pound Chicken, Boneless, Skinless, Cut Into Bite-Sized Pieces
  • 1 Tablespoon Butter Or Oil
  • 1 clove Garlic (optional)
  • 2 cups Orange Juice, Fresh Is Best But Not Necessary
  • 4 Tablespoons Honey
  • 2 Tablespoons Cornstarch
  • ¾ cups Snow Peas, Rinsed
  • ½ whole Red Pepper, Sliced
  • 1 cup Salted Cashews
  • Salt And Pepper, to taste

Preparation

Whisk orange juice, honey, and cornstarch until well blended. Set aside. Season chicken pieces with salt and pepper to taste. Heat saute pan on medium-high heat with oil or butter. Add chicken and cook for 3 to 4 minutes until nearly cooked through. Add garlic, if using, and stir as needed. Add orange juice mixture and bring to a simmer, then cook for 2 to 3 minutes until sauce thickens to desired consistency. Add vegetables, allowing to cook an additional 1 to 2 minutes. Stir in 3/4 cup cashews and allow to warm.

Serve over cooked rice with remaining cashews as garnishment.

I made this tonight and we all loved it! The sauce is delicious! We didn’t miss the battered style of chicken one bit. Alterations: I marinated my chicken in a little soy & garlic first, and also added some diced green onions, ginger, mushrooms, carrots, celery, cauliflower. (I had veggies I needed to use up). I didn’t have cashews but used peanuts and they were yummy too. Thanks for this recipe! A new favorite in our house!!
