This is a quick and easy dinner. These can be made ahead, then just pop them in the oven when you get home. They are so good that the kids will take leftovers to school for lunch.
Cook noodles.
Spread a spoonful of ricotta cheese over one noodle, to within 1/2 inch of the edge. Top with pepperoni and mozzarella cheese. Carefully roll up.
Place seam side down in a greased shallow dish. Top with spaghetti sauce. Cover and bake at 350F for 20-25 minutes or until bubbly.
I make an assembly line with my noddles and it doesn’t take long to get them put together.
Serve with bread and a salad.

Very good! I made it with 1. home made noodles and 2. cottage cheese instead of ricotta. It was easy to make and came together quickly. My daughter, who loves pepperoni thought it was great. The hubby would’ve liked some mushrooms and spinach. As long as they were cooked ahead of time, I think they would add to the recipe.
My recipe for 1 lb of noodles made enough so that we have enough leftover for a whole meal! Hubby had 3, I had 2 and 5 year old daughter had one. Ten servings means 10 rollups. Since I made our dough we ended up with 11 rollups and I could’ve probably stretched it to 12.
