Quick, easy, and flavorful lunchtime quesadilla. Red onions and red wine vinegar give this quesadilla a tangy kick. Can be made vegetarian very easily.
1. Finely chop the red onion and put it in a small bowl. Cover with red wine vinegar and marinate while preparing the quesadilla.
2. Sprinkle sea salt onto a nonstick pan. Put the tortilla on the pan and press down to get the sea salt onto the tortilla. Cover tortilla with shredded cheddar cheese (use as much as you’d like). Turn the heat to medium.
3. Tear the cold cuts into smallish pieces and sprinkle on the cheesy tortilla. Sprinkle the marinated red onion pieces onto the tortilla with your fingers. You will get your hands messy! Drip a little extra red wine vinegar onto the tortilla for an extra kick.
4. Fold over the tortilla and press again into the pan. Flip it over and press again. Serve when lightly browned and cheese is melted. Dollop sour cream on top.
