Description

My basic roast chicken.

Ingredients

  • 1 whole Chicken (4-5 Lbs)
  • 1 whole Onion, Peeled & Quartered
  • 2 whole Lemons, One Quartered, One Sliced Thin
  • ½ sticks Butter
  • Olive Oil
  • Salt
  • Pepper

Preparation

Preheat oven to 425 F.

Tuck wings under bird. This may take some muscle.

Stuff the quartered onion and lemon in the chicken cavity.

Loosen the skin from the breast using clean hands. Rub butter, oil, salt and pepper between the skin and breast. Place 4-6 lemon slices under the skin (they will be so yummy!).

Put more butter, oil, salt and pepper on the outside of the bird. Bake for an hour and a half, or until the juices run clear.

This is a simple, and just plain yummy dish. I omitted the butter and used only the olive oil. My husband and daughter just loved picking off the seasoned crispy skin afterwards. I served with rice & salad and it was a refreshing dinner. Thank you!
