A Mexican-style pizza made using cornbread as the crust.
Directions:
Prepare cornbread mix as directed on box and add in 1-2 tablespoons of melted butter. Put in a 10″-12″ skillet and bake in the oven until done.
Brown hamburger and season with taco seasoning. Add beans and cheese and stir until well combined and cheese is melted.
When the cornbread is done, top with meat mixture, then top with taco sauce, shredded cheese, and whatever toppings you like. (Tomatoes, onions, chili peppers, etc.) Place back in the oven long enough to melt the cheese. Cut into wedges and serve with sour cream.

Yummy! I’m eating this right now as I type this! I used boneless, skinless chicken breast instead of ground beef and just used Monterrey jack cheese instead of the Velveta (since I didn’t have any on hand). We topped with sauteed chopped onion and more Monterrey Jack cheese… delicious! Thanks for the recipe!

Tried this tonight and loved it. Used black beans because that was the only thing I had. Will use again and again.
Thank You

This looks awesome! I love stuff with those quick mixes. Now, if I could just find the jiffy cornbread. Not many stores carry it around here anymore.

What a good idea to use the cornbread mix. It makes the recipe simple and quick.
