This recipe was given to me from my boyfriend’s mother. It is simple, easy, and cheap to make not to mention DELICIOUS!
This recipe is really flexible. More or less potatoes can be used and the tomatoes can be omitted.
If using canned green beans, add during the last 5 to 10 minutes of cooking time.
1. Heat oil in large pot over medium high heat.
2. Add pork, onion, and garlic and brown until meat is well seared but not cooked through.
3. Add remaining ingredients and cook until potatoes are tender, 30 to 45 minutes.
