Unique and easy way to batter your fish. You’ll never want to order out again. Well, you might but it won’t ever be battered fish again!
In a shallow bowl mix your flour, salt and pepper. Set aside.
Preheat your oil in the deep fryer.
In a large bowl combine pancake mix, Perrier and egg. Stir until combined but don’t over mix it. You want it fairly runny as it makes the batter lighter and it sticks to the fish better. I always add a pinch of salt and pepper to this as well.
Cut fish into pieces. Now dredge you fish in the flour mixture. Immediately dunk it in the pancake mixture.
Carefully drop in the hot oil. Cook for about 6 or so minutes. Turn over halfway with tongs.
Remove and blot with paper towels. Serve immediately or if doing fries, you can slip it in a warming drawer or oven set to about 250ºÏ until they are ready.
Serve with a smile.
Tip: if you need to add more Perrier to get it runnier, then please do so. Not all mixes are the same. The key to a nice batter seems to be a thin, slightly runny consistency.
