In 5 minutes, you can prepare the best cut of meat you’ve ever made. The only hard part is enduring the tantalizing aroma until it’s time to take it out of the oven!
The recipe I’m about to share with you is so easy, even a caveman can make it. Our bachelor-friend shared this recipe with us; I modified it a bit, and named it after his nickname in his honor.
You just need a Ziploc bag and a covered roasting pan with a rack (my small, cheap one works wonderfully) to get started!
1. Preheat oven to 400F.
2. Measure salt, garlic and pepper into a Ziploc bag. Seal and shake until combined. Reopen and add the entire roast to the bag. You do not want to cut it! You just want to remove the wrapper and dump it in there! Shake until completely coated. Remove the meat from the bag and place the cut of meat (fat side up) on the rack inside the roasting pan.
3. Cover and bake for an hour at 400F, then LOWER THE TEMPERATURE to 250F and bake for another two hours. Don’t add water or anything else. Just leave it covered tightly and it will be plenty moist!
4. Remove from the oven and let it rest for 10 minutes before slicing against the grain.
Serve with peppers, onions and mushrooms, sauteed in butter or olive oil. Mashed potatoes are wonderful, too. Crusty bread. Salad. This is such an easy meal to “impress” with, and it doesn’t make a mess out of your kitchen! I like to buy a few meat cuts when they’re on sale and freeze them. They’re not as cheap as hamburger, but most definitely cheaper than taking everyone out to a restaurant.
Please note that you can add more pepper, if desired, if you like a bit more heat. And you can certainly make more than this at one time. Just increase the cooking time (for example, for 7 pounds of meat, I would bake it for 1 1/2 hours at 400F, then for 3 hours at 250F).
